BEER FROM EXTRACT

Cheap Generic

4 lbs. wet or 3 lbs. dry malt extract (pale, amber, or dark)
1 lb. corn sugar (or additional 1 lb. of extract) (alcohol about 4%. Add more malt or sugar if you want it higher.)
1/2 oz Chinook bittering hops (or any combination of hops totaling 5 to 9 alpha acid. The higher the acid, the more bitter the beer.)

1/2 oz aroma hops (any type)
Brewers yeast (any)

Hydrate the yeast a day or 2 before. Draw out 5 gals of water. If you are using chlorinated water do it the day before and let stand.
Fill your boiling pot 1/2 to 2/3 with water and heat it. Lower or turn off the heat and mix in the malt extract and sugar.
Bring it to a boil and add the bittering hops.
Boil at a rolling boil for 45 to 60 min.
Aroma hops can be added anytime during the last 15 min. or at the end. Any flavoring grains can then be added.
Keep covered as much as possible until cool to avoid hot side aeration and contamination.
Add the yeast to the fermentor. Pour the remaining water on top of the yeast causing as much aeration as you can. (If you are using a 5 gal. container, then hold back about 1 gal. of water for expansion.)
Pour in the wort (with as much aeration as you can), seal it up, and put on the bubbler.

When it is through pushing gas through the bubbler (the time varies a lot), rack it off into another container, add 1 cup of corn sugar and water to bring it up to 5 gal., mix well, and bottle your beer.

About a week at room temperature and it should be ready to chill and drink. Longer might be a little better, but I can never wait to at least try one.

You should be able to find all the ingredients for $15 to $17. That makes it around $2 a six-pack. By modifying the ingredients, such as pale, amber, or dark malt, hops, etc., you can make a fairly large variety of good tasting beers.
